The onsen. Deep reddish-black iron-rich water, unlike anything else we bathed in across three weeks in Japan.
Dinner and breakfast were outstanding. One of us is vegetarian, and the kitchen adapted both the kaiseki dinner and the traditional breakfast properly - replacing dishes rather than just omitting them, so the meal still felt complete.
The beds were genuinely comfortable, which is not always the case in a traditional room. And they drove us back to the station in the morning without being asked.

The hotel, facilities, and meals were all very good and well worth the price. But the quality of staff service stood out. During our stay, the tone was particularly warm and kind in addition to excellent service.
There were no serious faults to the stay. Just be aware of the location in relation to other places to visit in the Kanazawa, and plan accordingly.

An interesting traditional Japanese cultural experience. Beautiful art and gardens.
Distance from town and transport/transfers, anxious staff who were intrusive.
