The position
I asked for some gluten free products for my breakfast and in the morning a waiter prepared me some slices of GF bread warmed up it on the grill where all guests warm up their bread!
This means a total lack of knowledge of basic hospitality, the staff MUST be prepared for all reasonable requests of clients otherwise it is better to communicate that it is not possible to get a gluten-free breakfast.
If I had not noticed, I would have a stomach ache of incredible ones with unpleasant consequences.
It takes competence and honesty to admit that you are not able to handle some situations, that's all.
